Stepped on the scale this morning and was happy to see 189.7 pop up on that display!  I weigh the same exact thing I weighed yesterday so even after adding in all the cheese I had and a few of my sweet healthy treats I didn't gain anything.  Yes! 

Over the past couple of days I have made 2 yummy healthy sweet desserts.  Lara's dad and stepmom spent the weekend with us for Memorial Day and they loved the cookies so much that the batch of 28 was a batch of 11 before the day was done, LOL. 

The recipes came from the best blog I have come across in a long time called: Chocolate Covered Katie: Healthy Dessert Blog.  Here is the recipe I used for the Healthy Chocolate Chip Cookies - she has several variations you can choose from but these are the ingredients I chose:

Mini Chocolate-Chip Love Bites

1/2 cup rolled oats
scant 1/2 cup applesauce
1/4 cup coconut butter
1/2 tsp pure vanilla extract
1/16 tsp salt
1 tbsp coconut sugar
2 tbsp mini chocolate chips or chunks
2 1/2 tbsp chopped macademia nuts
Preheat the oven to 350 degrees. Mash the applesauce with the coconut butter, then add all other ingredients and mix until well-combined. Shape into cookies (I used a mini cookie scoop) and bake on a greased cookie sheet for around 14-16 minutes, then let cool 10 minutes before removing from sheet. This makes 18 mini cookies or 10-12 bigger cookies.

I also made Katie's 4 Minute Coconut Macaroons last night and those things are SO sweet and moist that you won't believe they could be healthy!  My picture didn't come out so great but here is what they looked like:

4 Minute Coconut Macaroons

▪ 1 cup shredded, unsweetened coconut (Let's Do Organic - Unsweetened Shredded Coconut)
▪ 1 T Let's Do Organic - Coconut Flour
▪ 1/2 cup plus 2 T Lite coconut milk
▪ 3.5 T Organic Coconut Agave
▪ 1/4 tsp pure vanilla extract
▪ tiny bit over 1/16 tsp salt

Combine all ingredients in a tall dish and microwave 3 minutes. (Or cook on the stovetop until it’s firm enough to scoop out in ball shapes.) Scoop into balls on a cookie tray (I used a melon baller, but a spoon or ice-cream scoop will work.) Cook at 360 F for 14-16 minutes. Let cool before removing from tray. You can drizzle or dip in chocolate if you wish.

My batch made 40 mini macaroons at 22 calories each.

I am currently on day 14 of my maintenance phase for round 2 of HCG and it has been going awesome!  I have maintained my weight within my 2 pound range without any issues and have been able to add back in dairy, cheeses, nuts, etc...without any weight gain spikes.  I also have finally started to lose a taste for the kinds of unhealthy foods I used to love to eat which for me is the biggest change...that has never happened before.  I have always still had the cravings or the taste for foods I shouldn't eat - but now, nada...So, bring it on AT&T with the commercials of fried goodness and battered food bouncing off plates like it is ambrosia - I am so ready for it :)  I also have found that making healthy desserts and indulging in just a couple of them a day is completely satisfying - I don't feel the need to eat the whole batch or lick the pan clean, LOL.  My body is definitely changing...

Speaking of changing - guess who DROPPED a pant size?  Oh yeah, that would be me!  I am now wearing a 14/16.  Sure beats that size 20/22 I was wearing just last year!  I finally feel in control of my health and my habits.  If I can do this...believe me, ANYONE can.
