Cristian wanted me to make some chocolate chip cookies last night...I love reasons to bake :) I made the same recipe that I had made over Memorial Day weekend when Lara's parents were here that everyone raved about, with one exception; unsalted cashew butter. The recipe I used last time called for 1/4 Cup of a nut butter and I used Coconut Butter and it was goooooood. This time around I used Cashew Butter to give it more of a nut flavor and I made the cookies a little bigger.
They look ugly in pictures but they tasted SO good! Cristian loved them so much that he didn't notice the rolled oats in them. I think I like the Coconut Butter ones better but Lara and Cristian seemed to like these better but it was still up in the air. So there was only one thing to do...I had to make a small batch of each so we could taste test. :)
Here is a pic of what they looked like but I warn you they look like they got a beating from the ugly stick all the way out of the oven, ha...
The darker cookies are the ones made with the cashew butter and the lighter ones are made with the Organic Raw Coconut Butter. I had one of each last night and I have to say that they are both just yummy - I can't seem to decide which I like better. :) They seem so sinful when I eat them but they are made with no added sugar - no flour - and use only applesauce, rolled oats, pure vanilla extract, organic cocoa chips, macadamia nuts, and the nut butter. The bigger version I made last night was still just 40 calories a cookie.
It is amazing to me that all it takes is 1 or 2 of a healthy sweet treat a day and my sweet tooth is more than satisfied! I used to be the girl who couldn't have just 1 cookie because if I did then there wouldn't be any cookies left for anyone else. :) I'm feeling pretty good about this new found level of self control and satisfaction and I have found a whole new love for baking!! It is so much fun to try out healthy recipes and see what they turn out like.
Cristian has already planned a weekend of baking together. He grabbed all his "chef" utensils and placed them in a special drawer and put out his Star Wars Apron so he won't forget where it is, LOL...I was instructed this morning when he was getting ready for school that he wanted to make a chocolate cake with NO coconut pieces in it...just chocolate and more chocolate and cream cheese icing and sprinkles that make a happy face. I am picturing coconut flour all over his body, egg shells all over the counter top, sprinkles on the floor, and icing all over his face...Nah, I don't give him enough credit - he is pretty good at keeping the egg shells contained in the bowl :)
Looking forward to a fun weekend with the kiddos I will have...now I just have to figure out how to make a chocolate cake with cream cheese icing and funny face sprinkles "health-i-fied" but still meet the stamp of kid approval...I like a good challenge :)
