I am glad to close this week on a high note. I finally dropped on the scale after holding steady for what seemed like months. I am down 1 pound from last week. I'll take it. :) It has been a tough week of NO official exercise. Work has been busy, school had been crazy but finally finished my term just in time for the next one to start on March 1, and we have had to spend a lot of time with Cristian on his school work this week. Not much room for anything beyond cooking dinner, doing dishes, doing laundry, cleaning...you know the "fun" stuff. Ha.
Today was a fun day! Lara and I went shopping for some scrapbook supplies. I don't know what it is with me and expensive hobbies. Between photography and scrapbooking I don't know which one sucks you dry faster...we are collecting supplies for a gift for Cristian's teacher we want to have done by the end of the school year. We are gathering pictures of her with different kids from the class, field trips, parties, etc...and are going to make her a scrapbook of her 1st grade class for this school year. We found the coolest stuff to fill the scrapbook with and a really beautiful album, 40% off at that, to put it all in. Now, just waiting on all the pictures to come in so we can start putting it together. Scrapbooking is really relaxing...it lets all that creativity just flow out in its own way :)
Cristian and I decided to do a fun chef project together today. We made "healthy" cupcakes. How can cupcakes be healthy you ask? Well we used Organic Cupcake Mix w/o any artificial stuff or GM Ingredients, Almond Milk, and Vegan Carob Chips! The cupcakes were SOOO good too! We are sending most of them to school tomorrow for faculty but we each had one tonight as dessert and there are 3 left for tomorrow too.
Dinner tonight wasn't anything special. It was a quick and easy dish because I was limited on time. I made some Amy's Organics Veggie Burgers (Soy Free & Gluten Free) and slapped them on whole wheat hamburger buns and served with a mix of fresh organic pineapple chunks, blueberries, and strawberries! It was yummy and had so much flavor. I can't wait to try the Quorn Veggie burgers next and see which one I like better.
Tomorrow is the first day of our PERSONAL TRAINING!!!!!!! I have never been more excited to get my butt kicked for an hour! This week we are training Monday, Thursday, and Friday but after this week we will be on a Monday, Tuesday, Friday schedule. I would prefer a Monday, Wednesday, Friday but we couldn't make any of the Wednesday times work with our schedule. I am so pumped!
Tomorrow I feel like I am starting from a whole new clean slate! Let the fitness training begin!
